Gluten-free Chili Mac’n Cheese

Here in the South, we are fans of casseroles and well-rounded dishes. Cheryl recently made a delicious, hearty dish that is a combination of our beloved Southern chili and mac’n cheese. Et viola! Hello GF Chili Mac’n Cheese! It’s a recipe that’s great for feeding a group of people at a get together or bringing out the next day when you have friends join for a meal unexpectedly.

We recommend pre-chopping vegetables when possible to make cook time less. This is especially helpful if you meal plan and have several dishes that use the same or similar vegetables. The spices that you’ll need are included in the recipe so you don’t need to worry about finding a gluten-free chili packet. Most spices are naturally gluten-free, but it’s always a good idea to check them if you’re in the process of making your kitchen gf and haven’t already verified them, as well as when using a new brand or blend (those sometimes throw wheat in there!).

Goat cheese adds an extra tang to the dish. For years, we’ve eaten mainly goat cheese due to an allergy and can be an excellent alternative for those who cannot do cow dairy. And if you haven’t tried it, goat yogurt makes a good substitute for sour cream. Recently, we’re starting to be able to add in some milk-fat based products like sour cream, but we still tend to blend the two during the process of adding new things.
